Mediterranean Lentil Salad
Serves 6
Salad Ingredients:
1.5 cups uncooked brown/french lentils
2 english cucumbers, diced
8 roma tomatoes, seeds/flesh removed + diced
1 red onion, diced
3 bell peppers, diced
2 cups chopped fresh herbs (I used parsley and mint)
10-12 ounces high quality feta cheese, crumbled
Chopped walnuts (for topping)
Dressing Ingredients:
1/2 cup olive oil
Juice of 2-3 lemons
2 tablespoons dijon mustard
2 heaping teaspoons dried oregano
salt & pepper
Directions:
Cook lentils according to package instructions.
While lentils are cooking - chop veggies and place into a large mixing bowl.
Whisk together dressing ingredients and set aside.
Drain any excess liquid from lentils and mix with veggies in large mixing bowl.
Add feta + dressing and mix well. Add additional salt, pepper and lemon as needed to taste.
Top with chopped walnuts before serving and pair with your favorite protein for a meal!
