Mediterranean Lentil Salad

Serves 6

Salad Ingredients:

  • 1.5 cups uncooked brown/french lentils

  • 2 english cucumbers, diced

  • 8 roma tomatoes, seeds/flesh removed + diced

  • 1 red onion, diced

  • 3 bell peppers, diced

  • 2 cups chopped fresh herbs (I used parsley and mint)

  • 10-12 ounces high quality feta cheese, crumbled

  • Chopped walnuts (for topping)

 

Dressing Ingredients:

  • 1/2 cup olive oil

  • Juice of 2-3 lemons

  • 2 tablespoons dijon mustard

  • 2 heaping teaspoons dried oregano

  • salt & pepper

 

Directions:

  1. Cook lentils according to package instructions.

  2. While lentils are cooking - chop veggies and place into a large mixing bowl.

  3. Whisk together dressing ingredients and set aside.

  4. Drain any excess liquid from lentils and mix with veggies in large mixing bowl.

  5. Add feta + dressing and mix well. Add additional salt, pepper and lemon as needed to taste.

  6. Top with chopped walnuts before serving and pair with your favorite protein for a meal!
