Feta-Veggie Lamb Bowl

This Mediterranean-inspired bowl was created by our Lead Clinical Dietitian, Courtney Cayer! It’s easy to prepare, loaded with flavor, and packed with 35 grams protein! It's also filled with ingredients that work wonders for your hormones.

Servings: 1 (consider making a larger quantity to enjoy leftovers!):

Ingredients:

  • 2/3 cup ground lamb

  • 1-2 cups pre-prepped broccoli/red pepper mix

  • ½ cup pre-prepped white potatoes

  • ¼ cup broccoli sprouts (for topping)

  • 2 tbsp crumbled feta cheese

  • Spices - listed below

Directions:

  • Sauté the lamb: Cook ground lamb on the stove with a blend of spices like:

    • Cumin

    • Oregano

    • Paprika

    • Garlic Powder

    • Cinnamon

    • Season with salt and pepper to taste.

  • Prep the veggies:

    • I like to make a big batch of veggies that I can add to other meals throughout the week! I cook up a tray of at least 4-5 cups of roasted veggies.

    • Toss your broccoli and red pepper mix with:

      • 1-2 tbsp olive oil

      • 2 tbsp balsamic vinegar

      • 1 tsp garlic powder

      • A sprinkle of oregano or thyme

    • Cook in oven at 400 degrees for 20-25 min

  • Air-fry white potatoes: Lightly season pre-prepped white potato cubes with olive oil, paprika, and a pinch of salt. Cook in the air fryer until soft and golden.

  • Assemble the bowl: Combine lamb, roasted veggies, and white potatoes into a bowl. Top with broccoli sprouts and crumbled feta.
