Chocolate Protein Chia Pudding

This Chocolate Protein Chia Pudding is rich, creamy, and loaded with healthy fats, protein, and fiber to keep you fueled throughout the day. Prep it in just minutes, and enjoy it as a single serving or make a big batch for the week!

(Tip: Double or triple the recipe to prep multiple servings at once!)

Ingredients:

  • ¼ cup chia seeds

  • 1 cup liquid of choice (organic whole milk, almond milk like MALK, etc. Adjust the liquid for your desired consistency.)

  • 1 tbsp. cacao powder (I love Navitas Organics for a deep, rich flavor.)

  • 25 grams chocolate protein powder (Paleovalley Chocolate Whey Protein with Colostrum is my go-to!)

  • ½ tsp. vanilla extract

  • Optional: A drizzle of maple syrup if you prefer extra sweetness

Directions:

  1. Combine chia seeds and liquid:
    In a mixing bowl, whisk together the chia seeds and your chosen liquid. Stir vigorously to ensure the chia seeds don’t clump as they begin to gelatinize.

  2. Add cacao and protein powder:
    Whisk in the cacao powder and chocolate protein powder until the mixture is smooth and well-combined.

  3. Let it rest and whisk again:
    Allow the pudding to sit at room temperature for 3-5 minutes, then whisk vigorously again to prevent lumps.

  4. Refrigerate:
    Transfer the mixture to an airtight container and store it in the fridge for at least 2 hours, or overnight for best results.

  5. Serve and enjoy:
    Top with fresh berries, nuts, shredded coconut, or your favorite toppings, and enjoy your creamy chocolate pudding!
