Best Ever Healthy Beef Chili
Ingredients:
2 large carrots, diced
3 large stalks of celery, halved and diced
2 bell peppers, diced
1/2 white onion, finely diced
2-3 cloves of garlic, minced
1 jalapeño, finely diced
2 lb ground beef (or protein or choice)
2-3 tbsp chili powder
1/2 tbsp oregano
1/4 tsp cayenne pepper
1 tsp cinnamon
Salt & pepper to taste
1 can organic corn, drained and rinsed
1 can black beans, drained and rinsed
1 can kidney beans, drained and rinsed
1 24 ounce can of diced tomatoes
2-3 cups @kettleandfire bone broth (or broth of choice)
Directions:
Heat 2 tbsp oil (olive or avocado oil) in large pot over medium heat.
Add carrot, celery, onion, peppers, garlic and season with salt & pepper. Sauté for about 5 minutes.
Add ground meat and sauté for another 3-5 mins, breaking up the meat into small pieces throughout.
Add the spices and more salt & pepper.
Add beans, corn, tomatoes and broth.
Bring to a boil and simmer for 20-30 mins.
Add the juice of 2 limes at the end.
Optional: use an immersion blender to blend about 2 cups of the chili or carefully remove 2 cups of the chili to a regular blender. Blend until smooth and return to the pot. This gives the chili a “simmer all day” texture. Totally optional.
