No Bake Carrot Cake Energy Bites
Ingredients
1 cup walnut halves/pieces
1/2 cup pecans
1/2 cup unsweetened shredded coconut
1 cup pitted dates
3/4 cup finely shredded carrot
2 heaping tbsp chia seeds OR ground flaxseed
1.5 tsp vanilla extract
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ground ginger
Optional: 1 tbsp pure maple syrup for added sweetness
Directions
Using a food processor: pulse walnuts & pecans until crumbly.
Add the remaining ingredients & process until a cohesive dough forms (about 15 seconds). Scrape the sides and continue blending as needed.
With damp hands or a scooper - roll into small balls (about 16-18).
Roll each ball in extra shredded coconut.
Store in the freezer for up to a week or freeze for later.
