No Bake Carrot Cake Energy Bites

Ingredients

  • 1 cup walnut halves/pieces

  • 1/2 cup pecans

  • 1/2 cup unsweetened shredded coconut

  • 1 cup pitted dates

  • 3/4 cup finely shredded carrot

  • 2 heaping tbsp chia seeds OR ground flaxseed

  • 1.5 tsp vanilla extract

  • 1 tsp cinnamon

  • 1/4 tsp nutmeg

  • 1/4 tsp ground ginger

  • Optional: 1 tbsp pure maple syrup for added sweetness

Directions

  • Using a food processor: pulse walnuts & pecans until crumbly. 

  • Add the remaining ingredients & process until a cohesive dough forms (about 15 seconds). Scrape the sides and continue blending as needed. 

  • With damp hands or a scooper - roll into small balls (about 16-18). 

  • Roll each ball in extra shredded coconut.

  • Store in the freezer for up to a week or freeze for later.
