Herby Lemon Almond Chicken Salad

Ingredients

  • 2 cups cooked chicken, roughly chopped

  • 1 heaping cup finely diced celery

  • 1/2 cup chopped green onion

  • 1 cup chopped fresh herbs (I used parsley but dill and cilantro work great too)

  • 1 green apple, diced

  • 1/3 cup sliced almonds

  • 1/4 cup - 1/3 cup plain full fat Greek yogurt (sub avocado or lactose free yogurt or plain coconut yogurt)

  • 2 tbsp Dijon mustard

  • Juice of 1 lemon

  • 2 tsp honey

  • Salt & pepper to taste

  • Optional: mix in microgreens before serving


Directions

  • Wash, Chop, and Prep all ingredients

  • Add chicken, celery, green onion,  fresh herbs, apple, and almonds to a large bowl

  • In a separate bowl stir together greek yogurt, dijon mustard, lemon juice, honey, salt, and paper.

  • Pour dressing over chicken salad and stir to combine.

  • Serve over greens or with your favorite seeded crackers.
