Herby Lemon Almond Chicken Salad
Ingredients
2 cups cooked chicken, roughly chopped
1 heaping cup finely diced celery
1/2 cup chopped green onion
1 cup chopped fresh herbs (I used parsley but dill and cilantro work great too)
1 green apple, diced
1/3 cup sliced almonds
1/4 cup - 1/3 cup plain full fat Greek yogurt (sub avocado or lactose free yogurt or plain coconut yogurt)
2 tbsp Dijon mustard
Juice of 1 lemon
2 tsp honey
Salt & pepper to taste
Optional: mix in microgreens before serving
Directions
Wash, Chop, and Prep all ingredients
Add chicken, celery, green onion, fresh herbs, apple, and almonds to a large bowl
In a separate bowl stir together greek yogurt, dijon mustard, lemon juice, honey, salt, and paper.
Pour dressing over chicken salad and stir to combine.
Serve over greens or with your favorite seeded crackers.
