Curry Chicken Salad with Apples + Cashews

Ingredients

  • 2-3 cups cooked chicken, diced

  • 3 stalks celery, diced

  • 3 green onions, diced

  • 1 cup cilantro, chopped

  • 1 Apple, diced

  • 1/4 cup plain full fat Greek yogurt

  • 2-4 tablespoons @sirkensingtons avocado oil based mayo (depending on how much you like)

  • Juice of 1 lemon

  • 1-2 tbsp curry powder (I love @oldfriendsfarm turmeric blend)

  • 1/3 cup - 1/2 cup chopped cashews

  • salt & pepper to taste

Directions

  • Chop and prep all ingredients

  • Mix together and adjust taste to your liking
