Simple vegetable quinoa salad with lemon
Makes 5-6 servings
Ingredients
- 1 cup uncooked quinoa, cooked according to package instructions 
- 3 small bell peppers, diced 
- 1 large English cucumber, diced 
- 1/2 red onion, finely diced 
- 2 cans chickpeas, drained and rinsed 
- 1 large bunch of flat leaf parsley, chopped 
- 1 cup sliced almonds 
- 3 cloves minced garlic 
- 1/3 cup olive oil 
- Juice of 2 lemons (add more if needed) 
- 3 tbsp red wine vinegar 
- 1 tsp red pepper flakes 
- Salt & pepper to taste 
Directions
- Combine all ingredients in a large bowl. Stays fresh in the fridge for 5 days.
