Simple vegetable quinoa salad with lemon
Makes 5-6 servings
Ingredients
1 cup uncooked quinoa, cooked according to package instructions
3 small bell peppers, diced
1 large English cucumber, diced
1/2 red onion, finely diced
2 cans chickpeas, drained and rinsed
1 large bunch of flat leaf parsley, chopped
1 cup sliced almonds
3 cloves minced garlic
1/3 cup olive oil
Juice of 2 lemons (add more if needed)
3 tbsp red wine vinegar
1 tsp red pepper flakes
Salt & pepper to taste
Directions
Combine all ingredients in a large bowl. Stays fresh in the fridge for 5 days.
